[ubuntu-us-in] Collapsing menus

I am planning on attending the IU Linux Fest, so I would be more than 
happy to help sit behind a booth and look officious for whatever group!

In Ubuntu, I notice that the Gnome Menu Item Lists that emanate from a 
click to either Applications/Places/System will be often be 
shortened/semi-collapsed mode when not accessed for several minutes. 
The collapsing is removed once a bit of mouse navigation occurs within 
the menu.  Is there an option for turning off this initial 
semi-collapsed feature by default?
