[CoLoCo] Converting iMac's to Ubuntu 12.04

Diane here, thru the purchase of our new building for LCS school, we are
inheriting 31 iMac5's.  I am interested in converting them over to Ubuntu.
 We have found some documentation (
http://tech-devnet.blogspot.de/2012/05/running-ubuntu-1204-on-mac.html)  and
it looks a little more complicated than converting a pc.  Does anyone out
there have experience, tips or tricks in converting Mac's to Ubuntu 12.04?

Specs for 17-inch  iMac5,1  (Late 2006)
Intel Core 2 Duo, 2 GHz, 1 GB RAM
Mac OS X v10.4 Tiger

Any help would be greatly appreciated.
