[CoLoCo] How to roll back some packages to Gutsy

Upon upgrade to Hardy, my Epson R340 priter has stopped working.  I'm
pretty sure it is not the printer because when I has some systems on
one release and some on the other it would only work on the Gutsy
systems.

I figured I could fix it, but I figured wrong, so now I'm prepared to
try to roll things back.

Is there I way I can roll back cups (or the gimpprint drivers) to
Gutsy but keep the rest of my systems on Hardy?  And then have them
not upgrade until I say so?
