My recommendation is this:

Setup an Ubuntu Server with LDAP and GOsa.

You can decide which services you want, but since you will have WinXP
machines at least in transition, I would install Samba.  Use Postfix for
your email, and if you want the calendars and stuff, go with egroupware.
All connect very will to LDAP, and GOsa can configure it.

The idea is to allow the end users to handle their own user accounts
(Mary can have email but not FTP, but George gets both), and freeing you
up for management of the servers themselves.

Run the demo... its impressive.
