The only ones I have checked right now are:

Volume manager
Update notifier
Restricted drivers
and network manager

I think technically you *COULD turn them all off. I just turned off the
visual one, so I don't know what it does. I will tell you if anything bad
happens.

I know the following were not there on the last version:
bluetooth
tracker (which i think takes a lot of resources)
print queue (i think)
users folders
visual

I think that the search (or tracker thing) and the name of the user on the
panel (top panel on desktop) use a lot of resources. I took them off. They
were not on the previous version. Also the various folders in the home
directory were not there before either (music, videos, etc...). I only think
the print queue would only be helpful if you print a lot one after another.
I don't use it, and my pdf "printer" works fine. And... the network manager
was added a couple of versions back (6.06 i think). At that time network
manager had LOTS of bugs. I used to just disable it and configure my network
manually wit >System >Administration >Network. I would disable "roaming
mode"
