[CoLoCo] Need help recovering data/system

TJ,
Your first task should be to get X back up and running...  most likely your
xorg.conf file was messed up somewhere in the upgrade.

Try this in a console:
sudo dpkg-reconfigure xserver-xorg

Choose almost all the defaults unless you know of a specific setting or
hardware profile that will fit you better.  This will get you your graphical
desktop back.  Next we should try to get you updated using the correct
update manager method, so try to go to System -> Administration -> Update
Manager and see if it tells you that there is a new release of Ubuntu
available.  If it does, go ahead and use that tool.  If not, it may be best
at this point to backup your data and do a fresh install with a 7.04 LiveCD
(I can send you one in the mail).

Using the sudo apt-get update method to go from one release to the next can
work, sometimes... but usually will result in the sort of issues that you
found.  These issues are often hard to resolve without having someone who is
familiar with package dependencies and whatnot right at the computer madly
typing away figuring out exactly what is broken and what simply needs to be
reconfigured or re-installed.
