Install onto a USB key then, don't run a live USB key. Once you
install onto a USB key it's just like running off a hard disk, just
slower.

Easiest way to do it is have two USB keys. One containing the Live
installer and a blank one. Boot to the Live key and install onto the
blank one. Once done you have a full system on a stick. Works a treat.
Just be sure during the install that you put grub on the right device
(i.e. not the Live stick and not the internal hard disk).

You can then boot off the new stick and install whatever you want. You
could then duplicate that stick as many times as you need for however
many computers you have.
