Hello, Chris.

I seem to be a bit of a lone voice here in advocating adding server 
packages to the Ubuntu Desktop install, but it works for me and this 
strategy makes it very easy to provide a FreeNX-based terminal server 
where people can run their desktop applications on the server, but see 
the graphical display on their client PC. I also find it easier to do 
admin tasks from the GUI. However, it's useful to know how to do it all 
from the command-line as well for disaster recovery. That said, my own 
disaster recovery strategy is to use the GUI desktop on a 'live' CD ;-)

As others have said, it depends what you want the server for...
