"man mencoder" in Terminal :)

If you are not familiar with manpages or the "less" command: up/down
scroll, page up/down, home, end and all keys work as you would expect.
Press 'q' to exit.

You can also see the mencoder online manual:
http://www.mplayerhq.hu/DOCS/HTML/en/mencoder.html

Both show examples and describe how to use mencoder.
