Flash - regrettably a necessity.
Flashblock - again, a necessity!
Thunderbird - better than evolution
Assorted xul apps, like Prism (integrates web apps into desktop)
Notecase - fave note taking app

Build essential - as the name states, essential for virtual machines, 
but useful for normal installs.

Also, I remove gnome games. To avoid temptation!
