[ubuntu-uk] Evolution irritation

I've just had an important email bounce because when I typed in the
email address (which isn't in my contacts list), Evo capitalised the
first letter.

I know I should have looked more closely, before I clicked "Send",
but ... it still irritated me. I've looked at Preferences, and I can't
see a way to turn off this function - is it possible?
