It can also be useful to backup /etc/ to grab any system wide config
changes, and the result of dpkg --get-selections to see what packages
are installed.

Sbackup is quite a nice backup tool and there's also hubackup. I don't
know how well they work with screenreaders, sorry.

There are many small scripts online that people have hand crafted. Maybe
a script created in a text editor would be easier for you to manipulate
via accessibility tools than bespoke applications.
