[ubuntu-uk] Replacing Evolution with Thunderbird in right-click "Send to" menu

Even if you un-installed Evolution it will not change the option code to 
Thunderbird on its own. It requires user intervention to mod the code:}
The question being asked is where is the code you should mod?
