I erratically get an "Error sending message '[content of the message
(without ÅÄÖ and åäö characters or other types of symbols): unknown"
when I send a message to an offline contact with msn account (only a msn
account has been set up).

After several try, I closed empathy (completely) and relaunch, then it
works for the message sent to the offline contact. The second one does
not work again.
