A few  things need changing I believe:
 - soname changes (LIBEMPATHY_CURRENT=25 -> LIBEMPATHY_CURRENT=26 and LIBEMPATHY_GTK_CURRENT=23 -> -LIBEMPATHY_GTK_CURRENT=24)
 - it'd be nice to document why it is built with libwebkit support now
 - lots of updated build-depends (do a "diff -ruN empathy-2.27.{2,3}/configure.ac | less")
 - I'd recommend to split up the patch into a "code (that lives in git) changes" part and a "updated autofoo" part, but that's your decision
