Michael, this is because the empathy devs wont change it.  The ubuntu
devs stick to upstream as much as they can, and something as small as
changing the icon theme may not hit their radar anytime in this century.
If you would like to we can push this to the icon theme people in ubuntu
and wishlist it to see if they will look into it.  personal opinion is
it will just stay ignored.
