My mistake. Instead of editing the /usr/games/etoys script to remove -xshm , I ran the squeak command line directly - which left SQUEAK_USERDIR unset.  Having the command line echoed on stdout makes that seem a plausible approach.
I didn't see directories mentioned in the man page either and found '/usr/share/etoys/My Squeak' in the debugger when attempting to save a project.
