I don't agree. I think it's one of the best reasons to switch. Once you
have decided on a switch you will start to look for solutions to your
normal workflow with a mindset of "I will find a solution!". That's how I
started out years ago and haven't looked back since. Well, not entirely
true, some parts I was doomed to dual boot into Windows for due to hardware
constraints and driver support, but eventually that was also solved and I
could port the last few applications into a Linux alternative.

As already pointed out Ubuntu Studio is not special in these areas from
other distributions. If you are security and privacy oriented there might
be better distros like Tails. However, it's possible to make your Ubuntu
Studio as secure as any with a little bit of work. Luke on the list here I
think is running a very tight Ubuntu Studio installation.

As Mike pointed out there's no difference here between different
distributions but you might need to use non-free drivers or restricted
repositories. If it's important for you to keep it free (in the sense of
RMS) you'll need to come up with something else.

I don't know of any application just like that as I haven't been looking
for it. I do use Scrivener (which is free beta use for linux so far) where
it would be possible to work like that. But Scrivener is not a note taking
app, it is not open source, there are limits in time of use of the beta so
it might not be a good alternative.

As already said, best way is to get a few Live CDs with different distros.
Boot them up, see what works and not, and see what you like at a first
glance.
