Here is one from "The Unofficial Icecast HowTo: A Hands-On Guide"

"Icecast does not require much in the way of hardware. A Linux box with 
as little as a i486 processor and 32 megabytes of RAM can easily stream 
songs. However, I recommend using at least a 400MHz Pentium II machine 
with a minimum of 64 megabytes of RAM."

Do not install (ie. Ubuntu Desktop) any desktop (Gnome, KDE) on that 
server, just Ubuntu Server and then just what you need for streaming.

Streaming server do not need much. Get connected to that server via ssh 
from your laptop/desktop. That's it.
