Hassle Free USB Audio Interface

On the consumer end of the spectrum, Behringer's UCA 202 and UCG 102 are very easy to use.  They worked with Ubuntu Studio Gutsy right out of the box.  They both sample at 16 bits, with 3 frequencies: 32.0 kHz, 44.1 kHz, and 48.0 kHz.

If you want to record at 24 bits, Behringer has a couple of FireWire devices: the FCA 202 and the ADA8000.  I have not used these devices.
