[Bug 1544341] [NEW] php-doctrine-bundle: update and add nocheck and stage1 build profiles

Update to PHP 7.0 versions of dependencies.

Also, bootstrap to not require phpunit and php-symfony-doctrine-bridge
in stage1. This requires manually specifying the dependencies instead.
