Just an update...
I've uploaded the latest evolution to my ppa with the necessary signal
emit changes, so evolution shouldn't need to be manually installed now.
(At least until its updated again.)
Also, just for kicks, I've implemented the suggestion about running at
startup and hiding when evolution starts. You can find both of these
options in the Plugins -> Evolution Indicator -> Configuration tab.
P.S. Not that it matters now, because the option is included in
evolution, but if you want a program to run at startup one easy way to
do it is Preferences->Startup Applications. (Actually thats how I
implemented the option in evolution-indicator)

Bug description:
Among all applications currently integrated with the indicator-applet (Empathy/Pidgin, Evolution, Gwibber), Evolution is the only one without a close-to-tray functionality. This is inconsistent as it forces the user to leave it open in order to use the indicator-applet properly. Close-to-tray functionality has been implemented for Evolution before, so I guess it's possible:
