I'd actually advise you to try Lubuntu or Xubuntu if it's an old
machine, as KDE (Kubuntu) tends to require more resources than GNOME
(Ubuntu).

But for the true headless machine with no display manager, I'd suggest
you just use the Ubuntu alternate CD to make a minimal install.
