I hadn't thought about the MTA option because I assumed (incorrectly) that it would expect that to be set elsewhere (the MUA). I did find that for Postfix (which seems to be what is installed by Ubuntu) it can be set using the Postfix smtp_generic_maps feature, I'll have to test.
