Fixed in Debian with packaging-only changes; needs a sync. Fix verified.

mysql-server-8.0 8.0.26-0ubuntu0.20.04.3 failed to install/upgrade:
installed mysql-server-8.0 package post-installation script subprocess
returned error exit status 127
Another "Too many levels of symbolic links" issue when upgrading mysql.
I dug a bit deeper but I still think these are manually broken systems,
but it would be interesting to understand what the users are doing.
