Not exactly GUI, but multitail [0] can do a nice job of highlighting
strings using regular expression rules. It makes my log viewing much
more pleasant than plain less(1) or tail(1). It comes with a colorscheme
for postfix log, and it's fairly easy to customize.
KSystemLog [1] for KDE 4 is nice, but it might take some configuring to
get full benefit if you use rsyslog's high-precision timestamp format.
