First we need to know what sort of server do you want, what sort of
GUI you want and what you want to do with it.
See https://help.ubuntu.com/community/ServerGUI for lots more on this
subject. E.g. you can get GUI administration remotely by using eBox
to get a web gui on the server and a browser on some other machine.
eBox probably has more tools specific to server administration than
Xubuntu (XFCE) or GNOME.
And also learn some of the reasons why you might want to avoid running
a desktop on the server.
