About ubuntu server packages

I think you missed the point.

If an LTS release is shared (in repos) by both server and desktop
versions, with different support periods, how can you tell wich
packages belong to each?

A simplistic answer i guess would be: everything included by default
on the server installation, plus the "LAMP server" meta packages; but
to be honest this is a good question.
