Your DpkgTerminalLog.gz has:
Setting up winbind (2:3.4.7~dfsg-1ubuntu3.1) ...
 * Starting the Winbind daemon winbind        start-stop-daemon: nothing in /proc - not mounted?

If this is true, that /proc isn't mounted in your chroot or build, you probably should have it mounted.
Can you test and see if mounting /proc (if its not mounted already) will fix the issue ?
