You need to update the AppArmor mysql profile to allow access for a
custom data directory. See https://wiki.ubuntu.com/DebuggingApparmor for
more information.

According to the daemon.log file:

And usr.sbin.mysqld apparmor profile doesn't give any access to /home
/jean-claude/mysql/ for mysqld.
