According to datadir.cnf:

[mysqld]
datadir = /home/jean-claude/mysql

You're using a non-standard location for you datadirectory. You need to
update mysqld apparmor profile to take into account the non-standard
location of datadir. Only /var/lib/mysql/ is supported by default.

Could you make sure that your mysqld apparmor profile allows access to
your custom datadir location?
