Based on these lines I'd like to make a guess

Configurando mysql-server-5.1 (5.1.31-1ubuntu2) ...
 * Stopping MySQL database server mysqld
   ...done.
 * /etc/init.d/mysql: WARNING: /etc/mysql/my.cnf cannot be read. See README.Debian.gz
 * Starting MySQL database server mysqld
   ...done.
/etc/init.d/mysql: line 115: /etc/mysql/debian-start: No existe el fichero ó directorio
invoke-rc.d: initscript mysql, action "start" failed.

You have previously had some mysql version installed? After uninstalling
it (without purging) you manually removed the files inside /etc/mysql/,
perhaps the entire folder?

Assuming that is the case, which would fit the error messages, the
package manager would still believe the mysql configuration files being
installed, hence becoming confused when they aren't present.

The critical packages in this case is by the way mysql-common. It is
most often installed indirectly as a dependency.
