$ grep -i 'guest account' /etc/samba/smb.conf
;   guest account = nobody
$ testparm -s --parameter-name='guest account'
Load smb config files from /etc/samba/smb.conf
Processing section "[printers]"
Processing section "[print$]"
Loaded services file OK.
nobody
$

So the guest account is set to nobody by default.  Are you sure the
problem isn't that the username you're using on the Windows client
matches a username on the Ubuntu server?
