Ubuntu servers: different servers have different packages, leading to some issues

Thanks all for the information!
I'm not sure what server is selected by default (in System Settings it was
just üsing "Server for Taiwan" without specifying which one).
What is the tool used to select the appropriate mirror during installation?
Do you think it could somehow select a mirror server which has the "Up to
date" status instead of a random one in the neighbourhood? (I suppose if we
can see this info in this link [1] there should be a way to do this)
