yeah, at my previous workplace they put all scripts and configs
in version control (well i think it's all, it might actually be
"most", not sure) and *everything* is in a script. no manual
iptables (or freebsd equivalent) configurations (since those
don't survive reboot).
i've heard good things about puppet too. although that's not so
much for backup as for configuring and maintaining many servers.
but backup is a side effect. that's a good thing. best, of course,
would be puppet configs stored in version control.
