I'm glad you were able to get a satisfactory solution.

For others still fighting with this, I released to

  snap refresh --channel stable/uri-debug thunderbird

a change so that it completes the URI scheme if missing, so please, if
you'd like to try from that channel, just run it from the command-line,
do as you normally would, and report back, including with stderr in case
it still fails.
