I could work around the problem by adding another mount, which instead of /var/nfs/oeffentlich/emailsignaturen/ uses /mnt/emailsignaturen/. An using that mount, the path isn't turned into something like "/run/user/2087/doc/e967c83e/mysignature.html" and signatures work across reboots&co.
=> it seems this is somehow related to snap using additional rules when dealing with /home/... or /var/...
