What exactly did you put in your userChrome.css? I am also using the New
Wave theme, and this works well for me:

@namespace
url("http://www.mozilla.org/keymaster/gatekeeper/there.is.only.xul"); /*
set default namespace to XUL */

menubar > menu {
	color: white !important;
}

menubar > menu[open] {
	color: black !important;
}
