François, I suggest that you install version 1.3 which comes with support for GStreamer 1.0.
Gnome Subtitles 1.3 will only be available in the official repositories in Ubuntu 16.04, but you can install it for your Ubuntu version from the Webupd8 PPA:

When opening MP4 videos, Gnome Subtitles crashes immediately. It's not
the case with all videos. But all the MP4 are failing.
