Tomboy should ship a -symbolic icon and use it for its system status
menu.

Status in “gnote” package in Ubuntu:
  Confirmed

Bug description:
  Binary package hint: ubuntu-mono

  Could you consider to add an icon for the gnote application (an
  alternative to tomboy). I've locally fixed the problem with a symbolic
  link named 'gnote.svg' to the tomboy icon (tomboy-panel.svg).

  Other applications that would like to have mono icons: guake, pulse-
  audio applet,...
