@Gionn: I think this is caused by a custom gedit desktop file which doesn't contain an icon definition.
This file might be located in ~/.local/share/applications/ ?

As subject, seems that docky can't get the gedit icons, it shows the default greyed one.
I am using the default ubuntu lucid icon theme.
