I can only confirm what has been said in the last comment. I find
exactly the same behavior with Gnome-Do 0.8.3.1 in Ubuntu 10.10.

When using GNOME-Do Docky, it'll disappear and begin to utilize full CPU, causing the machine to become sluggish.
This has happened multiple times, on an apparently-random basis.
