椎原です。

Ubuntu 11.04になったらLibreofficeに置き換わったのでOOo 確認できないので
すが、
外観の設定->カスタマイズ->色　の中の選択したアイテム　辺りの設定を変える
と良いのかもしれません。

確信はないので、よかったら試してみて下さい。
