We used to have "alternate" CD which offered text-based installer
(d-i) which used debootstrap and allowed manual package selection.
With current Ubuntu releases, you'd want to download and use Ubuntu
Server image for text based installation and you'd be able to choose
any desktop environment in addition to any other package selections.
