ubiquity customization

Hi all,

I am in the need to customize a Live CD edition. Al the work has been
done, but now I am stuck on ubiquity.

Following are my (hopefully) targets:

- no language/zone selection: fixed to Rome, Italian
- no extra language packs (i.e. openoffice-l10n...) installed as the
live CD is already configured for that.

Is it an ambitious target or can I modify some script/configuration file?
