The proxy is not the most important part of the puzzle here.  What
matters is that the proxy's firewall should allow connections via the
IMAP/POP3 ports (that is how we connect to gmail).  If your IT
department/whoever takes care of the proxy allows you, then you can
just follow the instructions given by gmail, to connect Evolution :).
IIRC, the instructions are given there for Thunderbird, but they'll
pretty much be the same, after you find the 'Add Account' (or similar)
window.
