I have openoffice.org - 2.4.1-1 on Debian Testing with SCIM - 1.4.7-3.
I don't have
"openoffice.org-l10n-mr-in" i.e. Marathi language pack installed,
still I am able to write in Marathi in OO.o
I also have "ttf-devanagari-fonts" installed. So installing
"ttf-gujarati-fonts" might solve your problem, though I am not sure.
