/etc/fstab provides the list of file system information that needs to be
mounted. /etc/mtab provides the list of file system information that is
currently mounted. /etc/mtab is temporary and is maintained by the
system. Editing / changing this could be dangerous.

What you want is to figure out which process mounts these devices on
plugging in (hotplug?) and then see how to configure it to work the way
you want.
