As far as google talk is considered there are no patent issues. Jingle 
is an extension to XMPP and libjingle is an open source library.

AFAIK, Kopete supports VoIP for both Yahoo and Google. Try installing it 
using synaptic and let us know if it works. I would have recommended 
empathy/telepathy combination but the version in gutsy doesn't support 
VoIP and I don't want to recommend third party repositories yet as you 
are new to Ubuntu.
