Exactly what server do you want to run? Ubuntu Server edition doesn't
differ from the Desktop edition save the kernel configuration and the
default set of software installed.
You can use the Desktop installation as a server by simply installing
the things you want to run. For example if you want to run a web-server,
just install apache2 and you are done.
